Tacos Please!

I could eat tacos every meal of every day, and never get tired or bored.

When people hear tacos, they don’t typically think lamb.

However, this is the dish that I recommend to anyone trying lamb for the first time.

Or re-trying it after a bad experience somewhere else.

Our lamb is mild, yet beautifully flavorful.

It is the perfect pairing for a dish with so much flavor, it doesn’t get lost and yet it doesn’t overpower.

Simple to pull together, Flexible ingredients based on the season and your dietary needs.

Take your taco game to a whole new level and turn into a lamb lover in just one meal.

You’ll notice I slipped a lil something extra in there… Paleo Lamb ( Ground Lamb, Liver, Kidney, and Heart)

I deeply believe, anytime you can sneak a little organ meat into a dish and it disappears seamlessly you’ve got a winner.

Exactly the same amount of effort with multitudes of rippling benefit in your cellular and brain health.

I mean who doesn’t want that?

I won’t lie, Paleo Lamb is a more robust flavor than paleo beef and regular lamb.

HOWEVER!!! Lambs are also eating different plants in our pasture when grazing, they have a different assortment of micro and macro nutrients for you because of this.

Its totally worth slipping it into this recipe for all of the amazing *benefits.

Savory Spiced lamb, meets sour pickled carrots + spicy jalapeños, zesty limes, refreshing yogurt, mozzarella, and homemade salsa! Yum!

Ingredients

Mediterranean Lamb Filling
  • 1 Pound Ground Paleo Beef/Paleo Lamb
  • 2Tbs Grass-fed fat: lard, tallow, butter, ghee
  • 1tsp Dried Oregano
  • .5-1 tsp Chipotle Chile Powder (.5 tsp if you like it less spicy)
  • 1 tsp Cumin
  • 1 tsp salt
  • 1/4 tsp black pepper
Chipotle Lime Yogurt Sauce
  • .5 Cup Organic Grass-fed Sour Cream or Yogurt
  • 1 Tablespoon Lime Juice
  • 1/2 tsp grated lime zest
  • 1/4 Chipotle Chile powder
  • 1/4 tsp sea salt
Seasonal Toppings
  • 8 Organic corn tortillas, warmed according to package directions.
  • 1/4 C pickled carrots and jalapeños, diced.
  • 1-2 Cups shredded mozzarella or cojita cheese
  • 2 Medium tomatoes diced or homemade salsa
  • 1/4 Cup Radishes, thinly sliced
  • 1/2 Cup shredded Red Cabbage

Instructions

  1. Combine all ingredients of the lime yogurt sauce in a bowl, set in the fridge to allow flavors to marinade.
  2. Heat sauté pan, add grass-fed fat heat until hot but not smoking. Add Lamb/Beef and oregano, cook until browned, stirring to break up into little crumbles.
  3. Once browned, add cumin and chipotle Chile, combine well.
  4. Mean while heat corn tortillas according to directions on package.
  5. Season meat with salt and pepper to taste.
  6. Assemble tacos and enjoy!
